No Time for Breakfast? Plan Ahead With Our Homemade Freezer Egg Burritos
Looking for a healthy breakfast or snack when you’re pressed for time? Try our homemade freezer egg burritos. A quick 30 minutes of cooking is all you need. Then store in the freezer until you’re ready to eat. Filled with eggs, veggies and other goodies, this recipe is a hit year-round.
Homemade Freezer Egg Burritos
Prep: 10 minutes
Cook time: 20 minutes
1 medium sweet potato, peeled
1 small onion
2 tablespoons butter
1 red bell pepper, cored and diced (about 1 cup)
1 teaspoon cumin
1 teaspoon salt
1/2 teaspoon chili powder
1/4 cup milk
1 14.5-ounce can black beans, rinsed and drained
1 1/4 cups shredded cheddar cheese
8 10-inch flour tortillas at room temperature
Salsa and avocado for serving
1. Grate sweet potato and onion using the largest holes of a box grater to yield about 2 cups total.
2. In a large nonstick skillet, heat 1 tablespoon of the butter over medium heat until melted. Stir in the grated sweet potato-onion mixture, bell pepper, cumin, salt and chili powder. Cook for 10-12 minutes or until softened. Transfer mixture from skillet to a plate and let cool.
3. In a medium bowl, whisk together eggs and milk. Melt the remaining butter in the same skillet over medium heat. Pour in egg mixture and cook, stirring occasionally, for 6-8 minutes or until egg mixture is cooked through but still moist. Remove from heat and let cool.
4. Place each tortilla into the center of a large piece of plastic wrap. Evenly divide the vegetable and egg mixtures among the tortillas, spreading slightly in the center. Sprinkle with beans and cheese.
5. Fold in the bottom and top edge of each tortilla, then fold in the opposite sides. Place seams down on the plastic wrap. Wrap tightly and store in a zip-top freezer bag for up to 3 months.
To warm, remove from foil or plastic wrap and warm on a plate – seams down – in the microwave for 1-2 minutes or until warmed through.
• Store for up to 3 months in the freezer.
• Date and label the freezer storage bag.
• Make sure components are fully cooled before filling tortillas to prevent sogginess.
• Make sure tortillas are at room temperature or even slightly warm to prevent cracking.
• Wrap tightly in plastic wrap to help keep the shape.
